Walking through the Santa Monica farmers market, it is easy to sense the excitement building in the air. The days are getting longer and warmer and with that comes tables bursting with life and color. Peaches, cherries and nectarines are clear attention grabbers which have a dedicated fan base returning each week to see when peak season has finally arrived and the hype is well deserved. Personally, I am already on a 3 peach a day diet. But I would be remiss if I didn’t shine some light on an underrated produce star currently shining at your local market: summer squash!
